10-Minute Midnight Rabokki: The Ultra-Easy Korean Ramen-Tteokbokki Without Rice Cakes
When I was around the age of my son now, I used to get so hungry late at night. I wanted to eat Tteokbokki (Korean rice cakes), but there were no rice cakes in the fridge. So, I experimented in the kitchen and developed my own way of making Rabokki (Ramen + Tteokbokki flavor) using just a pack of instant ramen.
I was shocked by how delicious it tasted back then, and to this day, I still whip this up whenever I need a comforting midnight snack. Everyone who has tasted my secret recipe absolutely loved it. Today, for the first time ever, I am officially sharing this recipe with the world.
The best part? It is incredibly easy. No fancy ingredients, no expensive shopping trips. Let's get cooking!
π Ingredients You Need
You don’t need to visit a specialty Asian grocery market for this. If you have a local supermarket and a tub of Gochujang, you are good to go.
1 Pack of Instant Ramen: Any brand of standard savory Korean ramen works perfectly.
Water: 300 ml (10.1 fl oz / About 1.25 cups).
Korean Gochujang (Red Chili Paste): Heaping 1/2 tablespoon (Approx. 15g / 0.53 oz ).
Sugar: 1/3 tablespoon (Approx. 6g / 0.21 oz ).
2 Eggs (Optional): Highly recommended if you have them in your fridge!
π K-Dad's Gochujang Shopping Guide
If you are standing in the Asian aisle of your local supermarket, you might see many different red tubs and squeeze bottles. Here is how to pick the exact right one for this recipe:
Look for the Traditional Red Plastic Tub: Authentic Korean Gochujang always comes in a classic red plastic tub. Make sure the ingredient list says "Fermented Red Chili Paste" (κ³ μΆμ₯).
Avoid "Gochujang Sauce": If the label says "Gochujang Sauce" or "Chili Dipping Sauce," it has already been diluted with vinegar, water, or mayo. Avoid these! We need the thick, pure traditional paste.
Check the Heat Level: If you are new to Korean spice, look for packages labeled "Mild" or "Medium Hot".
K-Dad's Trusted Brands: If you see CJ Haechandle (ν΄μ°¬λ€) or Daesang Sunchang (μμ°½), grab them immediately.
π©π³ Step-by-Step Instructions
Step 1. Boil the Eggs
If you are using 2 eggs, boil them ahead of time in a small pot, peel them, and set them aside.
Step2. Mix the Soup Base (Off the Heat!)
Do not turn on the stove yet. Keeping the heat off ensures everything dissolves perfectly without burning. Pour 300 ml (10.1 fl oz) of water into your pan and add the entire packet of vegetable flakes. Next, add exactly 1/3 of the ramen powder soup base.
π‘ K-Dad's Secret Pro-Tip: How to measure 1/3 of a soup packet without a scale? Simply tear open only 1/3 of the packet top. Use your fingers to tightly squeeze the remaining 2/3 of the packet, then gently shake the bag with both hands. Only 1/3 of the powder will fall out cleanly!
Step 3. Dissolve the Gochujang
Add a heaping 1/2 tablespoon (15 g / 0.53 oz ) of Gochujang to the water. Whisk it thoroughly with a spoon until there are absolutely no lumps left.
Step 4. Add the Sugar
Add 1/3 tablespoon ( 6 g / 0.21 oz ) of sugar into the water and mix well until dissolved.
⚠️ A Note on the Flavor: Taste the sauce right now. It might taste a bit light or diluted, but do not add more seasoning! As the liquid boils down and evaporates later, the sauce will thicken up naturally, and the flavor will become perfectly bold, sweet, and savory at the finish line.
Step 5. Boil and Cook the Noodles
Now, turn on the stove to Medium-High heat and bring the sauce to a boil. Once the liquid is bubbling, drop in your ramen noodles. Stir gently from time to time to separate the noodle strands. Let it cook and absorb the sauce for exactly 3 minutes.
Step 6. Serve and Enjoy!
Slide your boiled eggs into the rich, glossy red sauce. Turn off the heat, grab your chopsticks, and enjoy your deep, nostalgic, sweet-and-spicy Korean Rabokki right out of the pot!
π‘ Chef's Secret Pro-Tips for 10-Minute Midnight Rabokki
1. The Perfect Noodle Texture Secret Because instant ramen noodles absorb broth very quickly, add them when the sauce comes to a rolling boil and cook for only 3 minutes (1 minute less than usual). They will finish softening perfectly in the hot sauce as you serve and eat!
2. Delicious Ingredient Upgrades
Sliced Cheese Finish: Place 1 slice of American yellow cheese on top right after turning off the heat. The creamy cheese tempers the spiciness and creates a velvety sauce texture!
Soft-Boiled Egg or Fish Cakes: Add sliced Korean fish cakes (Eomuk) or a boiled egg to soak up the sweet and spicy broth.
3. Late-Night Sodium Hack If you are eating this late at night, swap ¼ cup of water with milk or add a splash of soy milk at the end to round out the sharp heat and reduce saltiness.
π Don't Throw This Away: Do not discard the remaining 2/3 of the ramen powder soup base. Seal it tightly. We are going to use it for our next secret recipe challenge!
